The Big Three: DOP, IGP, STG

DOP – Protected Designation of Origin

The gold standard. Every single step has to happen in a specific region, using traditional methods.

Example: Parmigiano Reggiano DOPMade only in certain provinces like Parma. Local milk. No shortcuts. Aged for 12+ months. Pure magic.

IGP – Protected Geographical Indication

One key part of the process happens in a specific region. Still high-quality, still repping tradition.

Example: Borgotaro Mushrooms (IGP) They grow wild in the forests of Parma’s hills. Earthy, rich, and 100% worth the hype.

STG – Traditional Specialty Guaranteed

This one’s all about the recipe, not the location. It protects old-school methods even if they’re made in multiple areas.

Example: Mozzarella STG –  Yep, the classic cheese—but made the traditional way, not the supermarket shortcut version.

“Italian Style” Isn’t Italian

Let’s get one thing straight:

Parmesan ≠ Parmigiano Reggiano

Prosciutto-style ≠ Prosciutto di Parma

That’s called Italian-sounding products that look Italian but are totally fake. They use clever branding (flags, pasta font, names ending in -o), but they’re made who-knows-where, with who-knows-what.

No rules. No tradition. No flavor. Definitely no Italian nonna involved.

How to Shop Like a Pro

Next time you’re in a store (in Italy or abroad), here’s how to spot the good stuff:

Look for official DOP/IGP/STG logos Read the label: where is it from? Who made it? Check for legit producer names (consortiums, certifications) Avoid vague claims like “Italian-style” or “authentic taste” without the seal
